Meatball bowl with hummus

Ingredients

  • 12 Mekkafood Meatballs
  • 2 pita breads
  • 60 g couscous
  • 1/2 eggplant
  • 2 lemons
  • 1 avocado
  • 2 tbsp hummus
  • 40 g baby spinach
  • 2 tbsp pomegranate seeds
  • 10 g mint

Preparation

  1. Prepare the meatballs as indicated on the package and bake the pita bread.
  2. Make the couscous salad by first cooking the couscous according to the instructions on the package. Then mix with the pomegranate seeds and mint and put it in a bowl.
  3. Then wash the baby spinach, cut the avocado into thin slices, the eggplant into slices and the lemon into wedges.
  4. Meanwhile, grill the eggplant in a frying pan.
  5. Divide a handful of spinach, avocado, grilled eggplant and a lemon wedge over the bowl.
  6. Finish it off with the meatballs and hummus. Serve the bowl with pita bread.
